Vegan Chocolate Cookies
I think all my friends know already how much I love baking. Surprisingly I’m not really so much into eating all the cakes and cookies I make, I prefer sharing them with my friends. After Christmas even many Carrefour worker has been asking when I’m gonna bake something again.. But lately I’ve been set with a new challenge – vegan friends and daughter with milk and egg intolerance. Everyone who bakes at least sometimes knows that butter and eggs are the basic things for almost everything. So what happens when you can’t use either of those? Well I’ve discovered a whole new world. And it’s easier than “normal” baking world. No beating eggs. No taking butter to warm up hours before. Basically it’s just mixing dry stuff with liquid stuff. And the result – delicious!
My latest discover was chocolate-orange-cookies for playdate with vegan friend and her daughter. I think these are the best cookies I’ve ever made and for sure the easiest ones to make.
Here is the recipe for you to try at home:
Orange chocolate biscuits
Ingredients (for about 20 cookies):
2 dl sugar
1 dl oil (if you use coconut oil, heat it until gets liquid)
½ dl dark syrup (I used Spanish version “Miel de Caña”)
3 tablespoons water
1 teaspoon vanilla sugar (or a pinch of vanilla powder)
3½ dl flour (spelt, wheat, oat, I think gluten free would work also)
1 dl cocoa powder
½ teaspoon baking powder
a pinch of salt
50 g orange flavoured dark chocolate
1 grated orange peel
½ dl oatmeal
Mix sugar, oil, syrup and water. Combine the dry ingredients and add them through the sieve to the liquids. Add chocolate, coarsely broken, orange peel and oatmeal. Roll the dough into balls and press them approx. 1 cm thick biscuits on the baking paper. Bake at 175°C for about 10 minutes. Let the biscuits cool and harden on the grid.
